Winemaking

Process: As soon as they are harvested, the grapes are destemmed and pressed; the must is conveyed directly into small stainless steel fermenters at a controlled temperature, where fermentation takes place for about two weeks.
Fermentation temperature: 27°C.
Refinement: in stainless steel tanks for about 15 months.

Terroir and grape varieties

Area: Fara Filiorum Petri and Ortona.
Altitude: 200 to 300 m above sea level.
Terrain type: clayey, with slopes from 7% to 10%.
Exposure to the sun: South, South-East.
Age of the vineyards: planted in 1985.
Stumps per hectare: 1,600.
Type of cultivation: Abruzzo pergola.
Yield per hectare: 140 quintals.
Harvesting method and period: hand picked in the second half of October.
