Winemaking

Process: After destemming, the grapes are gently pressed at a controlled temperature (12 ºC); the must is fermented in small stainless steel containers for about a month.
Fermentation temperature: 16 ºC
Aging: In small stainless steel containers for 7 months at controlled temperature, short aging in bottle lying down.

Area: Villagrande di Ortona (province of Chieti) .
Altitude: 100 m above sea level.
Type of soil: clay-alkaline, slope of 7%.
Sun exposure: South-East.
Age of vineyards: 6 years.
Vines per hectare: 3,200.
Method of cultivation: guyot.
Yield per hectare: 130 quintals.
Harvest and period: hand-picked in the second week of September.
