Winemaking

Harvest: Manual harvesting during the first week of September with careful bunch selection.
Vinification: Short cold maceration with the skins at 6°C for 24 hours. Spontaneous fermentation at controlled temperature in stainless steel.
Processing: No fining, no filtration.
Aging: In stainless steel for about 12 months.
